Why not cooking your prawns yourself??!!

There is a very big difference between the prawns you buy already cooked and the one you cook yourself. First of all, cooked prawns tend to be overcooked, and flavourless. Then, quite often (once again, this is only a generalization…), green prawns are cooked to increase their shelf life…
Next time you are looking for some prawns, take the time to try this recipe, you will not regret it!

For 1kg of large green Mooloolaba King Ocean prawns, you need :

1 lemon
2 bay leaves
10 black peppercorns
1 clove
Sea salt

You need to bring to the boil a large quantity of water, about 5 liters should be enough. The best way to cook your prawns is to use sea water, but if you don’t have access to the ocean, salt the freshwater around 20g salt/liter. This looks quite a lot, but don’t worry!
Add the bay leaves, the peppercorn, clove and the lemon juice to the water.
Once the water boils, pour the prawns in, and cover, so the temperature rises as fast as possible.
You will need 3 minutes on average to cook your prawns.
Drain quickly, let them cool down and put in fridge.
I like to add parsley stalks,thyme and half a glass of semillon in my poaching liquid. Served with a homemade lime mayonnaise, it is a delicious summer treat…
