Winter is The season for beautiful and delicious vegetables! Artichoke, celeriac, cauliflower, parsnip,…, and of course the Jerusalem artichoke! Called Topinambour in France, it a tuber from the sunflower family. They are brilliant roasted, steamed or sautéed. Although they tend to be a little mushy or soft due to a low content of starch and being high in inulin.
